If I had to choose my favorite meal since being low carb, it would definitely be patties, like Keto Cauliflower Patties, of any kind. There is anything so versatile, so easy to make, and so healthy. They enable us to use all kitchen rests, and still every time a new and delicious recipe comes out. Usually, you need like ten to fifteen minutes of spending in the kitchen before you throw them in the oven.
They taste fantastic even the next day, and even when cold, so that makes them perfect prep food, travel food, or work food. And for all the mummies out there, vegetable cakes are the perfect recipe for small kids. My kids usually refuse anything green. And aren’t big fans of cauliflower either. But if I hide all these unpopular veggies in patties, it’s a game-changer, suddenly a cauliflower doesn’t bother anyone, and fingers are being licked. What else could a mother wish?
Btw. What I didn’t mention yet, is that these beauties taste very similar to hash browns, which makes them a perfect side dish too. But I still prefer to eat them solo as it is an excellent possibility to take a break from meat for one day.
How to prepare cauliflower patties?
You will only need five ingredients to get these beauties done. I used a big cauliflower head to create 15 patties of the size of a hockey puck. Cut this into florets and, in a larger pot, bring salted water to boil. Add florets and cook until soft. That takes around 8-10 minutes. I prefer to cook them longer, as I am pretty sensitive to most of the raw vegetables and digest them harder. Drain the cauliflower properly (you can even use a cotton dishtowel to squeeze the excess liquid) and mash it with a fork or a potato masher. Set aside to cool down.
Preheat oven to 180°C (350°F) and set it to hot air. Line a baking tray with parchment paper. Now add rest of ingredients into completely cooled down cauliflower and stir into a dough. Don’t expect a compact mass. The batter will be sticky, but with the help of a spoon, you will be able to create equal-sized patties onto the lined tray. I could only fit eight cakes on the tray at a time. So I baked them twice.
The total baking time is around 20 minutes, but to make them nicely crispy – fried alike after ten minutes set the oven from hot air to grill, and bake 5 more minutes, then take out, turn patties around, and bake another 5 minutes. If they aren’t crispy enough for you, you can still fry them in oil or butter for 2 more minutes. I used to do that before, but now with switching to grill for the last few minutes, I find the consistency sufficient.

- 1 big cauliflower, cut into florets
- 2 cups grated cheese
- 2 eggs
- 3 garlic cloves
- 1 cup lupine flour
- Salt & pepper to taste
In a large pot, bring salted water to boil and add cauliflower florets to cook until soft. Drain from excess water and set aside, and let cool down.
Preheat oven to 180°C (350°F) hot air and line a baking tray with parchment paper.
Mix all the ingredients into a sticky dough, and with the help of a spoon, create equal patties onto prepared tray.1 big cauliflower, cut into florets
Bake for 10 minutes, then change from hot air to grill and bake another 5 minutes. Take out and turn the patties over and bake for five more minutes, until golden brown from both sides.
Serve with your favorite salsa as the main course or use it as a side dish.
